Juicy and delicious main course meal will surprise you with color and taste. Another pleasant surprise: you won’t spent half a day cooking this kitchen masterpiece thanks to increased speed of Pressure Cooker. Also you will save time on making dishes as pretty much all processes could be done in just one place – Instant Pot.

  • 1 1/2 lb ground beef
  • 1 1/2 lb ground pork
  • 3 lb tomatoes
  • 1 cup cooked rice
  • 1 carrot
  • 2 tbsp sunflower oil
  • 1 onion
  • 12 bell peppers
  • 5 cloves garlic
  • 2 bay leaves
  • 1/4 tsp black pepper
  • salt to taste

Here is a quick tip to consider when selecting the size of Instant Pot:

3Qt size – good for 2 people
6Qt size – good for 3-4 people
8Qt size – good for 5-6 people


  1. Wash tomatoes and cut them into halves, then place them into the Inner Pot.
  2. Pour a cup of water.
  3. Season with salt and black pepper. 2 bay leaves will bring extra flavor to your meal.
  4. Close the lid and turn the steam release handle to “Sealing” position.
  5. Select (Pressure Cook) program. “High” pressure mode is a default setting. Set time to 1 minute.
  6. When time is up, make a quick release. When the lid comes off, remove bay leaves and blend tomatoes. Set the tomato juice aside.
  7. Select (Sauté) program and pour sunflower oil into the inner pot.
  8. Cut a carrot and an onion into cubes and sauté them for about 6 minutes.
  9. Cancel (Sauté) program.
  10. Mix 1 1/2 lb ground beef and 1 1/2 lb ground pork in the large bowl. Add 1 cup of cooked rice and 5 cloves of minced garlic.
  11. Now it’s time to add seared carrot and onion. Season with salt and black pepper to your taste. Mix it thoroughly.
  12. Add approximately 1/4 of homemade tomato juice. Mix it well.
  13. Remove and discard the tops, seeds, and membranes of the bell peppers. Spoon an equal amount of the mixture into each hollowed pepper.
  14. Place 12 stuffed bell peppers into the inner pot and pour the remaining tomato juice over the top.
  15. Close the lid and turn the steam release handle to “Sealing” position.
  16. Select (Pressure Cook) program, chose “High” pressure mode. Set time to 8 minutes.
  17. When time is up, make a quick release.
  18. Colorful and tasty Stuffed Peppers are ready. You may serve it with sour cream and sprinkle with dill. It will bring extra creaminess and flavor.
